There are a few problems with your question, but I will answer what I think you want to know. Firstly, BMI is a pretty terrible way of deciding whether or not somone is at a healthy weight. I am a varsity athlete, and at 5 175, though I eat well and exercise regularly, my BMI is 25.1 making me "overweight." Different people are built different ways, and as such the same weight may be in actuality health for one person and unhealth for another. As with all athletes, Jockies health should be strictly monitored, but ultimately the dieting regimen some undergo is no worse than in Gymnastics, per se. Furthermore, jockeys do not actually try weigh as little as possible. Like you said, it is a 1,000 pound animal, and you need enough muscle to be able to control it. Thus, typically the Ideal jockey weighs at least 105 pounds. Also, the sport is inherently very dangerous, so the real heath risk is the horse falling at 35 MPH more than the Jokey being too skinny. Ultimately, the steriods that baseball players take are probably more detrimental to health than the occaisional Jockey who diets too much. Hope that helps.
